Parsnip Fries with Lemon Cashew Cream Sauce — erinlamb

Fries before guys? Am I right? 😉

Having a wide variety of veggies in our diet is important for a healthy microbiome. But I get it – sometimes plain veggies can be boring….that’s why I like to spice it up + make food fun! Like turning veggies into fries. These make a great snack or side for your dinner. Now it’s time to get cookin.’

ingredients

4 jumbo parsnips2 tbsp of coconut oil1 tbsp paprika1.5 tbsp rosemary1 tbsp thymesea salt1/4 c cashew butter1 tbsp lemon juice

almond milk

directions

1. Pre-heat oven to 375 F.

2. Peel parsnips and slice into fries.

3. Toss with coconut oil, paprika, thyme & sprinkle with sea salt.

4. Place on baking sheet lined with parchment paper and bake for 25 mins.

5. While fries are baking, mix cashew butter, lemon juice, sea salt, and enough almost milk to a consistency you are pleased with.

6. Toss parsnips and turn up the heat to 400 F. Bake for 5 mins.

7. Broil for a couple minutes until crispy – watch very closely so the fries parsnips don’t burn, tossing them often.

8. Remove from the oven, serve, and enjoy!

**This made tons of sauce, but the leftovers are great for salads, stir fries, and whatever else I can think of 😉
